Thanks for taking the time to share such detailed feedback.
You're right that the mobile and desktop experiences don't currently offer the same set of features, and this is intentional. The mobile experience is designed to be more streamlined and is primarily optimized for browsing and reading, while more complex editing, moderation, and administrative workflows are generally better suited to the desktop experience.
There are also practical considerations when bringing desktop tools to mobile. Features designed around a larger screen, desktop navigation, and mouse and keyboard input can't always be transferred directly to a smaller touchscreen without redesigning how they work. That said, this doesn't mean that more editing and administrative functionality couldn't be made available on mobile, and your suggestions around scrollable or sliding menus are useful examples of how these workflows could potentially be adapted.
I've taken note of your feedback regarding page creation, Special Pages, the Admin Dashboard, tables, persistent tools and buttons, and the broader need for editors and admins to be able to do more from mobile. I'll share your feedback and suggestions internally for consideration.
Regarding changes being lost when switching between Visual and Source editing on mobile, this is a known issue that unfortunately remains unresolved at this time. We understand that this isn't ideal.
The issue you're experiencing when pasting multiple lines of text appears to be separate. Please report that through our support form so we can gather the necessary details and investigate it further:
